It is that time of the year..Christmas, which means gifts, turkey, stuffing etc etc…so now at this late time of the day it is time to consider how to you go about making a stuffing for the turkey?
There are millions of recipes for this and a millions variations on those recipes so how do you chose which one and which way to go?
If you have an old family recipe definitely use it, you a very fortunate, but if you are like me and your father made the stuffing, kept it secret his whole life and then upon his demise handed it to his second son, Hugh, who is the best person on this earth,but he to won’t part with the stuffing recipe either, then you are on your own and you have to find an alternate..(maybe after reading this Hugh may be shamed into revealing the secret recipe)
I chose EASY.
Get a loaf of bread, let it get stale, cut into chunks and put into a blender and turn into bread crumbs. (or be a cheat and buy breadcrumbs, not as good, but hey at this time of the year an easy option.)
Go into your garden and cut a good selection of all your herbs,parsely, basil,sage,rosemary and thyme etc and chop it all finely.
Chop a couple of onions up finely, and saute in a pan with a large knob of butter and cook until soft.
Stir in the herbs and cook for approx 1 minute, then add the breadcrumbs to absorb the butter. Add lemon zest and almond slivers and for that Christmas cheer a good handful of cranberries.
Cook until the breadcrumbs start to go crisp.
That’s it EASY. Now stuff both ends of that Turkey and cook.
