Granny Mels Slow Cooked Pork and Beans with Fried Bread…
a really delicious recipe
1 x slab of Free range pork belly or shoulder
2 x large carrots, peel and cut into large fingers
4 x large tomatoes (or 1 x 400g can of peeled toms)
1/2 bottle of Granny Mel’s Scorcher!
1/2L water + 1 Tblspn Vegeta (or chicken or vege stock)
1 x 400g can Berlotti, Cannellini, Red Kidney or mixed beans
1 Tblspn Tomato PasteThrow everything except the beans and tom paste into a slow cooker, turn it to high and forget about it for a few hours. The Bread: makes 4. These are very more-ish so it’s good to double the mix for more than 2 people
1 large potato, boiled and mashed
2 1/2 tspns yeast
1 tspn sugar
1 3/4 cups plain flour (spelt flour is also nice)
3/4 Tblspn salt
1 Tblspn Olive Oil
1/2 cup milk
about 2 inches of oil in pan (I use a wok) for deep fryingMix all dry ingredients together in a big bowl. Mix wet ingredients in a seperate bowl. Combine the two with the mashed potato and stir into a ball of dough with a butter knife. Knead it a little bit – everyone feels a bit kneady from time to time. Put back in bowl and cover with glad wrap. Leave in a warm place (on top of hot water system is good) for 20mins or so until it doubles in size. Put into the fridge and go out to an art exhibition or to the pub with your mates for a few hours. When you get home and are famished, take dough out of fridge and give it a couple of minutes to return to room temperature. * Heat oil in pan on medium, put dough on a floured surface and cut into 4 parts. Squish out dough with your fingers to make a semi flat surface. Using a rolling pin takes out too much air and you want these to be light and puffy. Pop into hot oil for a minute or so then turn over. Drain on paper towels.*Meanwhile (back in the kitchen) get one of your mates to throw the can of beans into the slow cooker, pull apart the pork with 2 forks and add tomato paste. Turn off slow cooker. And get one of your other mates to cut up some lettuce, tomatoes, cucumber, grated carrot and fresh coriander, and to grate some cheese.
Remember the sour cream!!!
A lime to squeeze over it all was also awesome.
