John Costello

John Costello, who lived and worked in Sydney Radio as an announcer and traffic co-ordinator for many years, made the Sea change to the coast and now really lives and loves the lifestyle. He and his wife, Sue, live right on the beach at One Mile Forster and entertain friends and family extensively over the summer.

This is Johns Dish

 

John loves to entertain, and of course the summer on the coast suits light and delicious deserts. For his Summer Trifle John takes fresh local seasonal fruit, jelly, cream and custard, and combines it all with a light sponge cake and a dash of your favourite liquor.

 

 

Trifle Ingredients

Fresh seasonal fruit
Mix of coloured jellies
cream, and chocolate
light sponge cake
Choice of liqueur

Directions

 

Place a dash of liqueur in the bottom of the bowl

Layer cake, jelly, fruit and custard as desired

To plate, place shards of chocolate on top and serve ice cold

Enjoy!
