Marzena makes us Bliss Balls

QUICK, EASY AND HEALTHY – BLISS BALLS!

We all want a little snack from time to time – so here is a very simple recipe for cacao, coconut and date balls.  Preparation should not take you more than 15 min – makes approx 20 balls.

Ingredients:

2 cups (approx 400gm) dates – chopped to little pieces

1/2 cup of coconut milk

3 Tbs cacao powder

3-6 Tbs shredded coconut.

For rolling:

1/2 cup of shredded or desiccated coconut

20 frozen raspberries

Method:

1. Place all the ingredients in a food processor and process for 1-2min on high speed until all ingredients come together and form a smooth but firm paste.  You may need to add a bit more or less shredded coconut to make it firmer.

2. Place approx 1 level Tbs of the mixture in your hand, pop a frozen raspberry in the middle and roll it gently to form a ball (it is good to wet your hands in cold water so the mixture does not stick)

3. Roll all the balls in either shredded coconut, chia seeds or sesame seeds, put them in a container and place in your fridge to firm up.

Variations: I like to add some orange juice (1-2 Tbs) and orange zest to the ingredients.  You can also add some seeds or nuts or chia seeds etc or 25ml of brandy if you are making naughty brandy balls(!) – as long as the mixture is firm enough to roll in your hands.

For rolling in, you can use either just shredded or desiccated coconut but I like to roll them also in toasted sesame seed and chia seeds (see photos)
