Pasta Sauce – North Coast Style


Two tins of diced tomatoes (AUSTRALIAN)
Two Rashers of bacon (finely diced and pre-fried in the saucepan that you will cook the sauce in)
One finely chopped onion
One desert spoon of crushed Garlic
One desert spoon of crushed Ginger
One desert spoon of sugar or honey
Teaspoon of sweet chili sauce (desert spoon for those who like a bit more fire)
Fresh Basil (finely chopped)
A good pinch of Oregano
Salt and Pepper to taste.
Note: This quantity will do two people two meals, I freeze half.
Cook and let stand for a couple of hours before re-heating.
