Pandang Chicken
A light, aromatic dish with a tangy flavour
Preparation time: 15 mins plus 1 hour standing
Cooking time: 40 Minutes
Serves: 4
You will need:
1 Kg chicken thigh fillets, cut into 3 cm cubes
Half a cup of lime juice
250 gram ripe tomatoes
1 cup water
3 small red chilies seeded and sliced into thin strips
2 teaspoon grated ginger
2 cloves crushed garlic
1 teaspoon ground turmeric
stem of lemongrass 10 cm long
1 cup of coconut cream
1. Combine chicken with lime juice and stand for 1 hour
2. Chop tomatoes combine with water blend till smooth and strain into a pan
3. Add chilies, ginger and garlic, tumeric, lemon grass(remove before serving) and undrained chicken. Bring to the boil, reduce heat , cover and simmer for 30 mins.
4. Add coconut cream, simmer uncovered for 10 mins
