Christmas is a time of love, happiness and relaxation. We also often find ourselves reflecting on the year that was. It’s a time to soak up our loved ones, friends and colleagues and appreciate each other and especially appreciate how magical the little people are in our life that we call our children.

Meringues

 

Ingredients

 

4 Egg Whites

220g Castor Sugar

2 Teaspoons Cornflour (sifted)

1 Teaspoom White Vinegar

Food Colouring and sprinkles (optional)

 

Method

 

Preheat oven to 100º. Place egg whites in a large, clean, dry bowl. (Handy Hint: Using a glass or metal bowl is best). Use and electric beater to beat egg whites until soft peaks form. Gradually add sugar beating well between each addition. If sugar doesn’t dissolve properly, the meringues may sweat in the oven. Continue beating for 2 minutes until trailing peaks form. Add the cornflour and vinegar until just combined.

Add your choice of food colouring and beat in.

Pipe or place balls of mixture onto baking trays leaving 5cm between each one.

Bake in oven for 2 – 2.5 hours. Turn off oven when done and leave in oven to cool.
