THAI COCONUT SWEET POTATO LENTIL SOUP
INGREDIENTS
1 onion, chopped
Knob of ginger (around 3cm long), peeled and finely chopped
1 tablespoon thai red curry paste
40grams olive oil
2 large sweet potatoes chopped into small chunks
3/4 cup rinsed red lentils
3 cups vegetable stock
Juice of half a fresh lime
1 tablespoon fish sauce
300ml coconut milk
METHOD
Simmer onion, ginger and curry paste in a large pot with olive oil until soft.
Add sweet potato, lentils and stock.
Bring to the boil then cook on a medium heat for approx. 20mins or until sweet potato is soft.
Stir gently every so often.
Add coconut milk, lime juice and fish sauce then blend together with stick blender.
Serve with fresh coriander.
Extra tip- butternut pumpkin or carrots can be substituted for some of the sweet potato if you don’t have enough on hand.
