Breakfast at the Races

Dale Spriggs has made the move from professional Jockey to restaurant owner. Dale has been lucky to ride with a lot of the leading trainers over the years, including Bart Cummings, Gai Waterhouse, Chris Waller, and John Sargent. He has ridden here and overseas and finally made the decision to retire and move to the coast. He had been coming to Forster Tuncurry for many years and had good friends who lived here so it was a natural transition for him. His wife Danielle has always been passionate about food and cooking and in looking for something to keep them busy in retirement they decided to venture into the food industry…and from there Dashers was born. After looking at all the food trends in Sydney they decided that Burgers were the go. It was certainly the right decision. Dashers situated on Memorial Drive overlooking the lakefront in the main tourist area of Forster has been an outstanding success.

Here Dale, with his chef Johnny, have taken their skills to the Forster Tuncurry racecourse and have created a breakfast burger with a twist.


Egg and Bacon Roll with Salsa Ingredients:

Brioche Bun

Red Onion
Salt & Pepper


Finely Chop Avocado, Tomato, Cucumber, Red Onion and Chilli.
Mix together in a bowl and Squeeze in lime juice and then add Salt and Pepper.

BBQ Bacon and fry egg on the hotplate.

Butter the Brioche bun with mayonaise and then add bacon, egg and salsa
